Truffes au chocolat

INGREDIENTS
120 g dark chocolate
60 g Beurre d’Isigny AOP
2 egg yolks
2 tsp icing sugar
1 tbsp cocoa powder
1 tbsp shaved coconut
1 tbsp crushed hazelnut
METHOD
Start by melting the chocolate in a bain marie.
Add the diced butter, then the icing sugar.
Take it off the heat and add the egg yolks. Mix with a wooden spoon.
Refrigerate for 4 hours.
Take a teaspoonful of the mixture and shape into truffles using your hands.
Roll the truffles in cocoa powder, shaved coconut or ground hazelnut.
